Tonight’s Dinner: Simple Salad

I’m not sure what I’d intended to make for dinner tonight, but by the time I got home, I certainly didn’t have a plan. Rummaging through the fridge, I found Wild Harvest Fresh Herbs and Green Leaf Salad, shredded carrots, some sliced black olives and fresh mozzarella (leftover from the pizza experiment on Monday night), and a few of the Perdue cutlets (also from the pizza). I threw all of that together, topped it with a few spritzes of Ken’s Lite Accents Italian Vinaigrette, and *poof* – dinner.

This one’s added to the list of simple weeknight dinners.
